Pott On Her Majesty's Secret Service 2019
100% Cabernet Sauvignon from the Stagecoach vineyard where the red, iron-rich soils of the Pritchard Hill (Vaca) range yield wines that are densely coloured and rich. This is from ten south-facing rows that slope gently and then rise again like a perfect chaise longue at about 1400 feet. Fermented with natural yeasts, temperature increased during fermentations to increase extraction while dissipating the alcohol. Aged in a combination of Sylvain, Taransaud and Bossuet barrels.
“Deep garnet-purple colored ... gives up classic scents of cassis, plums and cedar with suggestions of underbrush, black tea and tapenade. Full-bodied and very tightly wound with firm, grainy tannins and bold freshness, it finishes long and lifted.” (Perrotti-Brown, The Wine Advocate, (95-97) points)
