PlumpJack Napa Valley Estate Cabernet Sauvignon 2018
100% Syrah from cool Carneros. 63% destemmed and fermented in stainless steel tanks, cold-soaked for 4 days, then fermented at a maximum temperature of 30c, and pressed off the skins after 8-10 days. The balance whole-cluster fermented in open-top tanks and barrels, fermented at a maximum temperature of 27°C, and pressed off skins after 7-8 days, then transferred to French Oak Burgundy barrels (78% new) for malolactic fermentation and 16 months’ maturation. Inky dark colour, aromas of black pepper and cherries, on the palate, soft, grainy-textured tannins and bright acidity. Lush plum, berries, cocoa, and peppercorns with a hint of grilled meat, full-bodied and rich yet with a firm backbone of tannin and acidity, and great length.
