Le P'tit Paysan L'Apiculteur Viognier 2015
Fermented in a combination of once used French barrels, neutral casks and stainless steel and aged on lees for 6 months with partial malolactic. Peach blossom, apricots, just under-ripe peach, jasmine, sea air and granite stones on the nose. Varietal richness on the palate is offset by bright acidity, with notes of wildflower honey, starfruit and pink lady apples. Bright, medium finish, with satisfying salinity, quince, a bit of white chocolate and an underlying wet riverstone minerality.
