SONOMA, CALIFORNIA. Founded in 1988 by Donald Patz, James Hall, Patz & Hall now has a well-founded reputation for top-end single vineyard Chardonnays and Pinot Noirs. Chardonnays are whole cluster pressed, and fermented using a mixture of wild and cultivated yeasts (P&H are not doctrinal in this respect). Malolactic takes place in French oak barrels which vary between a third or so new for the Sonoma Coast and half for Hyde, matured on lees with weekly stirring. Typically the Pinot Noirs are also fermented with a mixture of wild and cultivated yeasts with around 10% of fruit fermented with stems and aged in 60% new French oak barrels.

A commitment to developing close personal relationships with many of California’s finest growers: people like Larry Hyde, Lee Hudson and the Martinelli and Pisoni families, has become the cornerstone of the winery’s success, allowing Patz & Hall to realize the highest levels of quality and consistency.
Patz & Hall make all of their wines in a state-of-the-art winery in Sonoma designed by winemaker James Hall, allowing them complete control during every step of the winemaking process. In the winery, Patz & Hall applies both traditional and cutting-edge techniques, including a unique, custom barrel program, where stave wood is air dried and seasoned for three years to Patz & Hall’s specifications by the François Frères and Seguin Moreau cooperages. To reveal the distinct identity of the legendary sites they work with, Patz & Hall applies a consistent winemaking approach that has been refined to underscore the finesse, depth and complexity of each vineyard. Located in the Sonoma Coast, Carneros (Napa Valley), Russian River Valley, Mendocino County and Santa Lucia Highlands, these vineyards span California’s finest winegrowing regions.
Dutton Ranch boasts some of the oldest plantings of Chardonnay in western Sonoma County. This wine is predominantly a blend of California heritage clones and selections: Robert Young, Rued, Hyde-Wente, UC Davis clone 4 and Spring Mountain. Mostly dry-farmed, the vines struggle to produce small but intensely concentrated berries, making for great depth of flavour and texture.
Hyde Vineyard has justifiably become one of the superstar vineyards in Carneros. Larry Hyde has developed two of the most important grape selections in California: Hyde-Wente Chardonnay and Hyde-Calera Pinot Noir. Both are noted for extremely low yields, primarily due to the very small berry size within each cluster.
