Le P'tit Paysan: Le P'tit Pape 2016
Sourced from five vineyard sites in Monterey and San Benito counties, with soils based on granite and limestone substrates. Picked at moderate sugars, fermented in several lots ranging from 0-50% whole cluster with native or cultured yeasts depending on the lot. Aged in 97% neutral, 3% new casks for 16 months. 53% Grenache, 35% Syrah, 8% Mourvèdre, 3% Counoise 2% Cinsault.
