Vineyards and Winemaking ~ The Winiarski family has produced Hawk Crest wines since 1974. Over the years, the winemaking team has carefully researched and selected specific vineyards in some of California’s most promising growing areas from which to source fruit for these  exciting wines. By blending fruit from vineyards in Northern Monterey County, Santa Lucia Highlands and the Central Coast, Hawk Crest’s winemaker, Mark Smith, crafts a Chardonnay that expresses the cool climate and well drained soils from which these grapes originate. These vineyards benefit from a climate that is perfectly suited to Chardonnay, resulting in a wine with bright acidity and ripe fruit flavours. The wine is further enhanced by partial barrel fermentation, 30% malolactic fermentation and 5 months barrel aging sur lie for additional complexity and texture. Notes
On the nose, aromas of spice and Gravenstein apple, white peach and bright tropical fruit are complemented by hints of roasted nuts, citrus and pear. Subtle toasty oak nuances beautifully intertwine with fresh white peach and nectarine flavours in the mouth. The texture is polished with bright acid notes, with a long, elegant finish. Try this wine with grilled red snapper finished with mango chutney, or simply accompanied by a selection of mild cheeses.
