Nearly all of the Pinot Gris comes from Duck Pond's estate vineyards in Salem: Delaney, Hylo and St Jory. In the St Jory vineyard the vines are spaced 5’x8’, the older vineyards, Delaney & Hylo use 6’x9’ spacing. The soil in these vineyards is primarily “Jory” soil, a weak volcanic ash and rock type promoting low yielding vines. The vineyard management follows a strict regime. Early in the year shoot thinning is performed. After fruit set, leaves are removed in the fruit zone on the east side of the vines. Later the clusters are counted and adjusted through thinning for a maximum of 28 clusters per vine. Finally, once the grapes have achieved 75% colour, a final cluster thinning is performed to remove any green clusters and second crop clusters. The average yield was 2 1/4 tons per acre. Notes
The cool 2007 vintage growing season resulted in Pinot Grigio grapes with superb, natural acid structure. This wine was fermented entirely in stainless steel at cool temperatures to maximize retention of volatile fruit aromas. This wine is bursting with tropical fruit aromas, such as mango and star fruit.
