Over the years, Etienne Boileau has established himself as one of the most serious growers in Chablis; he produces a Chablis for every occasion, from Petit Chablis to premier cru. The Vaillons vineyard is on an exposed, south-east facing hillside on the left side of the Serein river. Its wine is entirely unoaked and gives a round, slightly floral style with appley flavours. Montée de Tonnerre and Mont de Milieu both lie on the right bank beside the grands crus, and like them they face south-west. These are the most structured of the premiers crus (they receive 20% to 40% of new to three year old oak) and require a little longer in bottle; firm, nutty and mineral they approach the grands crus in style.
